Sweet Potato Nachos

Coach Sara A.’s tip: If you love nachos, you have to try these sweet potato nachos for a healthier alternative! Sweet potatoes are rich in complex carbs, fiber, and loaded with vitamin A. They are rich in beta-carotene (which is converted to vitamin A) and anthocyanins, which are antioxidants that may help prevent vision loss, improve eye health, and boost your immune system. The following recipe is vegetarian, but feel free to add your favorite lean protein, such as shredded chicken or pork. 


1 large sweet potato, washed and sliced into rounds

1 Tbsp avocado oil 

Spices to taste: Salt, black pepper, turmeric, and cumin 

One 15.5 ounce can refried beans or black beans (rinsed) 

½ cup shredded sharp cheddar or monterey jack cheese 

2 ounces (⅓ of a 6 ounce bag) fresh organic spinach, chopped 

1-2 stalks green onion, chopped 

1 jalapeno, deseeded and sliced (optional)

Optional garnishes:

⅓ cup black olives, sliced (optional) 

½ avocado, sliced (optional) 

Shredded chicken or pork, cooked (optional)

Favorite hot sauce (I like Tapatio), salsa, or pico de gallo


  1. Preheat oven to 400˚F. Wash and evenly slice sweet potato into rounds, about ¼ inch thick. 
  2. In a large bowl or on the cutting board, drizzle rounds with a touch of avocado oil. Toss until evenly coated with oil. Season with salt, pepper, turmeric and cumin. 
  3. Line a baking sheet with parchment paper, lay rounds flat. Bake for 10 minutes, turn over, and bake for another 10 minutes. 
  4. Evenly top the sweet potato rounds with refried beans and/or black beans. Layer shredded cheese, chopped spinach, green onion, and jalapeño if desired. 
  5. Broil for 5-7 minutes or until toppings are heated through and cheese is melted. 
  6. Garnish with cooked shredded chicken or pork, black olives and/or avocado if desired, and your favorite hot sauce. Serve immediately while hot, enjoy!
