Recipe of the Week: Summer Tomato Gazpacho

Tomato gazpacho is the perfect summer recipe to enjoy your homegrown (or market-fresh) tomatoes. This quick and easy recipe is a tasty alternative to salads. Enjoy as an appetizer or side dish with your favorite protein.

Ingredients

  • 4 large Roma tomatoes (1 lb) 
  • ⅓ of a whole cucumber (English/seedless) (~½ cup)
  • ¼ of a green bell pepper (~¼ cup) 
  • 1 slice bread (ideally refrigerated) 
  • 2 tablespoons vinegar (sherry, white wine, red wine, or apple cider) 
  • 1 tablespoon extra virgin olive oil    
  • ⅛ teaspoon paprika
  • Sprinkle of salt + freshly ground black pepper to taste
  • Garnish of herbs: oregano, basil, parsley, or cilantro  

Optional Ingredients

  • 1 jalapeno (deseeded)
  • 1 tablespoon shallot 
  • 1 garlic clove
  • ½ lemon, squeezed
  • Extra virgin olive oil, enough for a small drizzle per serving
  • 2 teaspoons whole wheat bread crumbs, enough for 1 teaspoon per serving

Directions:

  1. Wash and roughly chop veggies. Add all ingredients to a food processor or blender. Pulse and puree until smooth.
  2. Allow to chill for at least 1 hour before serving. 
  3. Garish with a drizzle of extra virgin olive oil and herbs of choice. 

Makes 2 servings. 

Nutrition Total: 162 calories, 0.5 g fat, 33g carbs, 6g fiber, 5g protein, 379 mg sodium (with ⅛ tsp salt and without optional ingredients) 

Nutrition per serving: 81 calories, 0.25g fat, 16.5g carbs, 3g fiber, 2.5g protein, 189 mg sodium
