Recipe of the Week: Simple Watermelon Mint Summer Salad

Searching for a simple and delicious recipe to serve for the 4th of July or at your next picnic? Look no further. This simple Watermelon Mint Summer Salad is sure to be a crowd-pleaser. With its’ sweet and tangy flavor, this salad is not only refreshing but is also packed with antioxidant-rich phytonutrients, like beta carotene and lycopene. With a 92% water content, watermelon is also a great way to stay hydrated and beat that summer heat!


  • 8 cups watermelon, cut into 1-inch cubes 
  • 1 pint fresh blueberries 
  • 1/2 cup crumbled feta
  • 3 tablespoons mint leaves, finely chopped
  • 2 tablespoons fresh lime juice 


  • In a large bowl, gently combine watermelon, blueberries, feta cheese (see tip), mint, and fresh lime juice. 
  • Cover and transfer to the fridge before serving.
  • *Tip: If waiting longer than 30 minutes to serve, wait to add the feta cheese just before serving. This will help prevent the feta from absorbing too much of the watermelon juice.
