Recipe of the Week: Mexican Breakfast Pizza

Pizza for breakfast? If it sounds too good to be true, think again.

This tasty and healthy start to your day satisfies your body's nutrient needs, and your taste buds. Packed full of protein, complex carbohydrates and nutrients, you'll be fueled until your next meal, and might not even need a snack!

Coach Sara A.’s tip: Choose a 100% whole wheat, low carb, or gluten free tortilla to suit your preferences. For best results, look for tortillas with at least 2 grams of fiber and ideally no more than 25 grams of carbs. For high-fiber low-carb tortillas, you may calculate the net carbs total (carbs minus fiber) when evaluating the carb count and impact on blood sugar levels. 

Makes 1 serving 

Mexican Breakfast Pizza


  • 1 medium high-fiber tortilla (soft taco size) 
  • ¼ cup refried beans, low sodium  
  • ¼ cup bell pepper, chopped 
  • 1 cup baby spinach 
  • 1 ounce Monterey Jack, sharp cheddar, or cotija cheese
  • 2 eggs

Optional toppings:  

  • Avocado slices (¼ avocado) or 1 tablespoon guacamole 
  • Green onion, chopped 
  • Cilantro, chopped 
  • Jalapeno, sliced  
  • Black olives, sliced 
  • Salsa or hot sauce 


  1. Spread the refried beans evenly on the tortilla.
  2. Wash, chop, and sprinkle the veggies over the refried beans.
  3. Add a light topping of your favorite cheese. 
  4. On the stove top, add the decorated tortilla to a nonstick skillet, cover, and cook over medium heat until the cheese starts to melt (about 3-4 minutes). Pro tip: Use a little cooking spray in the skillet first if it’s not non-stick. Careful not to burn the tortilla! 
  5. Crack the two eggs directly on the decorated tortilla. Cover the skillet with a lid and keep on the stovetop, or transfer (without a lid) to a 400℉ oven to finish cooking the eggs. Cook until the egg whites are fully cooked and yolks are still a little runny (if desired). 
  6. Transfer to a plate and add optional toppings. Using a pizza cutter or sharp knife, cut the decorated tortilla into 8 slices (just like a pizza!) and enjoy it while it’s hot.

Calories: 390 calories,  Total fat: 17g, Carbs:  34.7g, Fiber: 7g, Protein:  22.5g
