Recipe of the Week: Blueberry Antioxidant Smoothie

Smoothies can be a great way to incorporate nutrient dense fresh produce into your day! This smoothie includes blueberries, an antioxidant powerhouse, along with Greek yogurt for protein, and chia seeds for healthy fats and additional fiber to help balance blood sugar and keep you satiated.

Pro Tip: Opting for a frozen banana makes this smoothie thick and creamy. Allow bananas to ripen, cut in half, and freeze for later in an airtight container or individually wrapped. 

Blueberry Smoothie Ingredients:

  • ½ cup blueberries, frozen 
  • ½ medium banana, frozen 
  • 1.5 cups raw baby spinach (optional) 
  • 1 cup unsweetened non-dairy milk (used vanilla almond milk) 
  • 1 tablespoon chia seeds 
  • ½ cup unsweetened Greek yogurt (used plain 2% Fage) 
  • ½ serving of protein powder (optional to add 5-15 grams of additional protein) 
  • Dash of cinnamon

Directions:

Combine all ingredients and blend until smooth.
