Pumpkin & Chickpea Blondie Bites

Coach Miriam’s tip: These bites pack some protein, fiber and heart healthy fats into a slightly sweet and festive treat! Plus, the prep is super easy. It can also be made vegan by using an egg replacement or flax egg in place of regular eggs.

Ingredients:

One (15.5 ounce) can garbanzo beans

3 large eggs (or vegan egg replacement to make vegan)

3 Tbsp avocado oil

⅓ cup pumpkin puree (unsweetened) 

⅓ cup pure maple syrup

1 tsp vanilla extract

¼ tsp baking powder

¼ tsp pumpkin pie spice

¼ tsp salt

½ cup dark chocolate chips

⅓ cup chopped nuts (walnuts or pecans)

Touch of oil for greasing pan (coconut or avocado spray oil) 

Instructions: 

  • Spray oil in a 8” x 8” the pan to prevent sticking and preheat oven to 350 degrees Fahrenheit. 
  • Combine all ingredients with the exception of the chocolate chips and nuts in a food processor, or high powdered blender if food processor is not available.
  • Blend until smooth. Fold in chocolate chips and nuts. 
  • Spoon batter into baking dish and bake for 30 minutes. Let cool then cut into 2” by 2” squares. Enjoy!
